Method
1️⃣ Preheat Your Oven
Preheat your oven to 180°C and line a baking tray with baking paper.
2️⃣ Blend Your Cookie Dough
Add the chickpeas, egg, maple syrup, peanut butter, almond meal, Unflavoured Collagen Peptides, baking soda, vanilla extract and salt to a blender.
Blend until the mixture is smooth and well combined.
3️⃣ Add the Choc Chips 🍫
Stir the dark chocolate chips through the cookie dough until evenly distributed.
4️⃣ Shape Your Cookies
Spoon large portions of the mixture onto your lined baking tray.
This recipe makes approximately 10 large cookies.
5️⃣ Bake
Bake at 180°C for 20–25 minutes, or until the cookies are cooked through.
6️⃣ Cool & Set
Remove from the oven and leave the cookies to cool for around 15 minutes.
Don’t skip this bit. Giving them time to cool helps the cookies firm up and hold their shape.
7️⃣ Finish With Sea Salt
Sprinkle a little flaky sea salt over the top and enjoy. 🍪🤎
