Method

1️⃣ Make the Sauce Base

Whisk WPI Pure with 30mL of water until smooth. Add Greek yoghurt and grated cheese, then mix until well combined. Set aside.

2️⃣ Cook the Pasta

Boil pasta until cooked to your liking. Drain and set aside.

3️⃣ Sauté the Aromatics

In a pan over medium heat, sauté diced onion and minced garlic until soft and fragrant. Add chilli flakes to taste.

4️⃣ Add the Sauce

Pour in the tomato passata and stir through. Reduce heat to low, then add your WPI cheese mixture. Stir until the sauce is creamy and well combined. Don't let it boil — keep it low and slow.

5️⃣ Toss & Serve

Add the cooked pasta to the pan and toss to coat. Serve immediately with extra cheese and chilli flakes on top.
