Soft, fluffy and bursting with strawberry flavour, these Strawberry Banana Protein Muffins are an easy addition to your weekly meal prep. Made with Strawberry Protein Powder, ripe banana and juicy strawberries, they're perfect for brekkie, an afternoon snack or whenever you need something sweet.
Method
1. Preheat the oven
Preheat your oven to 180Β°C and line a muffin tin with 6 muffin cases.
2. Mix the wet ingredients
Mash the bananas in a large bowl. Add the egg, vanilla extract, yoghurt, chopped strawberries and coconut sugar, then mix until combined.
3. Add the dry ingredients
Add the almond meal, self-raising flour and Strawberry Protein Powder. Gently stir until just combined. Avoid overmixing to keep those muffins nice and fluffy.
4. Fill the muffin cases
Divide the mixture evenly between the 6 muffin cases and sprinkle with flaked almonds.
5. Bake
Bake for 18-22 minutes, or until golden on top and a skewer inserted into the centre comes out clean.
6. Cool and enjoy
Allow the muffins to cool slightly before serving. Then dig in. π
