Raspberry Ripe fans, this one’s for you! This choc-top chia seed pudding brings together the sweet-tangy burst of berries, creamy coconut, and a smooth chocolate shell for a nourishing snack or brekkie that feels like dessert. Plus, it's packed with protein and calcium thanks to the lactose-free milk powder.
🍓 Method:
1. Blend the base:
In a blender, combine milk powder, water, sweetener of choice, and frozen berries. Blend until smooth.
2. Mix and soak:
Pour into a bowl and stir through chia seeds, desiccated coconut, and fresh berries. Adjust sweetness if needed. Pop in the fridge to set for at least 2 hours.
3. Make the choc top:
Melt dark chocolate and coconut oil together in the microwave. Pour over the set pudding and refrigerate until the top firms up into a crackable chocolate shell.
4. Dig in and enjoy!
