Need a quick snack to fight off those 3pm cravings? These PB + Date Protein Balls are chewy, chocolatey, and packed with goodness. High in protein and naturally sweetened, they’re ideal for a post-workout bite or a desk drawer treat.
🥜 Method:
1. Blend the mix:
Add all ball ingredients into a food processor. Blend until a sticky, fine mixture forms. Taste and add extra maple syrup if you like it sweeter.
2. Roll & chill:
Roll into 12 balls and place on a tray. Freeze for 1–2 hours until firm.
3. Melt the chocolate:
Microwave dark chocolate and coconut oil in 20–30 second bursts, stirring until smooth.
4. Dip & set:
Coat each ball in the chocolate and place on baking paper to set. Optional: double coat for extra indulgence or drizzle extra choc on top.
5. Store:
Keep in the fridge or freezer. Let sit at room temp for 15–20 mins before eating if frozen.
