Soft, sweet, and full of comfort—this banana loaf is a winner for arvo tea, lunchbox treats, or slow weekend brekkies. With golden white choc chips and that classic banana richness, it’s simple to make and even better to eat.
Method:

Preheat your oven to 165°C (fan-forced) and line a loaf tin with baking paper.

In a large bowl, whisk together the milk, oil, honey, eggs, mashed banana, and vanilla until smooth and well combined.

In a separate bowl, mix the dry ingredients, then sift them into the wet mixture. Stir gently with a wooden spoon until just combined—don’t overmix.

Fold in your add-ins (white choc chips, nuts, or extras of your choice). Pour the batter into the prepared tin and smooth the top.

Slice a banana lengthwise and gently place it on top. Sprinkle over a few extra white choc chips for good measure.

Bake for 45–50 minutes, or until the top is golden and a skewer inserted into the centre comes out clean. Let it cool in the tin before slicing and serving.
Tip: Best enjoyed slightly warm with a cuppa. 🫖
