Don't let the chickpeas fool you—these choc chip blondies are soft, gooey, and absolutely addictive. They're gluten-free, vegan, and naturally high in protein thanks to the humble legume and a boost from vanilla pea protein. The perfect afternoon pick-me-up without the crash.

🍪 Method:
1. Preheat the oven:
Set to 170°C (fan-forced).
2. Blend the base:
Add all ingredients—except the choc chips—into a food processor. Blend until smooth and creamy.
3. Add choc chips:
Fold in the chocolate chips with a spatula or spoon.
4. Bake:
Transfer the batter into a lined square baking tin. Bake for approx. 20 minutes or until golden on top and set.
5. Cool & slice:
Let it cool in the tin before slicing into bars or squares.
Enjoy warm, or chilled straight from the fridge—both ways are delicious.
