@Jwdiary is back at it again with his delicious vegan recipes, this time delighting us with his very own recipe for Vegan Protein Granola.
We don’t need to go into why granola is so awesome, but we will go into the great nutritional properties and fun facts of some of the ingredients.

Bio Pro – Organic Rice Protein

Mesquite Powder –
Mesquite Powder is a natural sweetener sourced from the bark and pods of the Mesquite tree sourced generally from the US and South American deserts.
Mesquite powder is both gluten free, and relatively high in protein (approximately 16% per 100g), containing good quantities of calcium, magnesium, potassium, iron and zinc, and is rich in the amino acid lysine (Fun Fact: commonly used to treat herpes, and plays an essential role in calcium absorption).
High in fibre, manganese, biotin, phosphorous, Vitamin B1 and zinc, oats are an excellent source of complex carbohydrates – a staple in most athletes diets.
Pepitas, or Pumpkin Seeds are rich in nutrients and vitamins, with almost half the daily recommended serving of Magnesium per serve! Pepitas have links to improving your heart, and liver health as they’re filled with healthy fats and antioxidants.
Sunflower Seeds –
Sunflower Seeds are extremely high in Potassium, Vitamin B6 and Magnesium, making them an excellent addition to your dietary regime.
For those who are not fans of sea creatures, flax seeds are an excellent source of Omega-3 in the form of alpha-linolenic acid. Flax seeds are extremely high in fibre, and low in carbs, perfect for your digestive health and improving your bowel movements.
Vegan Protein Granola
- 11 fresh medjool dates
- 500mL boiling water
- 3/4 cup tahini
- 120g Vanilla and Cinnamon BioPro PSA
- 2 tbsp mesquite powder
- 2 tbsp cinnamon
- 1 tsp vanilla bean powder
- 6 cups oats
- 1/2 cup cashews
- 1/2 cup pecans
- 1/2 cup walnuts
- 1/2 cup pepita seeds
- 1/4 cup sunflower seeds
- 1 cup raisins
- 1/2 cup shredded coconut
- 3 tbsp flaxmeal
Preheat a fan forced oven to 120ºc.
Soak the Medjool dates in the 500mL of hot water for five minutes.
In a blender, blend the date, date water, tahini, PSA, mesquite, cinnamon and vanilla bean powder until smooth. Set aside.
In a large bowl/container, combine the oats with all the nuts and seeds, raisins and coconut.
Now at the date and tahini mixture and combine.
Gently stir through the flax meal into the mixture.
Divide mixture into two lined baking trays and press down with the back of a spoon, or using your hands.
Bake for roughly 1 1/2 hours - 2 hours depending on your oven and the mixture itself.
Ideally, the top of the mixture should be brown.
Remove from oven and let sit until cool.
Break up the granola using your hands and store in an air-tight jar.
You shouldn't have to worry about how long this will last in the jar because it's so good you'll eat it before that becomes a predicament.
